Honey Maple Muesli
A beautiful homemade breakfast muesli with a bit of pizzazz.

This is an adaptation of an online recipe that turned into something surprisingly delightful. A friend from RāKiwi recently gifted some honey to me, so my partner and I decided to try make our own museli after a finishing all the breakfast cereal in the pantry.
This recipe does an excellent job of highlighting the rich flavours you can find in most New Zealand honey.
- Combine the honey, maple syrup and oil in a saucepan over medium heat. Cook, stirring often, for 4 minutes or until runny – do not allow to burn.
- Preheat oven to 150˚C. Line a large, deep baking dish with baking paper.
- Chop or lightly blitz your nuts using blender to preference.
- Combine all remaining ingredients except the dried fruit in a large bowl. Pour over warm honey mixture. Mix well to combine.
- Spread mixture evenly over the base of the dish. Bake for 25 to 30 minutes, stirring every 10 minutes, or until golden and toasted. Remove from the oven and add the dried fruit, mixing all together.
- Set aside to cool completely when the muesli will have formed some crisp clusters. Crumble these clusters down as you put the muesli into an airtight container to store.
The great thing about this recipe is you can add or substitute ingredients to create a little bit of variety. You may want to also add seeds (approx 1/2 cup) to in toasting process, or mix up the combination of the nuts and fruits you use.
Try not to eat it all in one go!
